Patas Azules, named after the Bobo Patas Azules bird native to the eastern Pacific Ocean, is a Somerset-based Ecuadorian food truck with a uniquely technological origin.
Ana Killion, owner of Patas Azules, is a data analyst from Ecuador.
“Well, I’m from Ecuador, of course, and I’m data analyst, so I have another career, this is like a hobby,” said Killion. “My husband is an electrical engineer, so both of us are in the computer world. So that’s why we created this project. We have a website you can order online, you can buy online.”
According to Killion, Patas Azules owes much of its success to carefully-monitored data analytics, in addition to its high-quality, authentic Ecuadorian cuisine.
“We have the reports in every day, which of the dishes are more, you know, popular,” said Killion. “So we have this kind of grounded in data analytics.”
Of course, it’s not the data analytics that continues to draw customers to Patas Azules. The food truck’s menu features flavorful Ecuadorian favorites made fresh daily by the Killions.
“The food I’m serving is mostly from the coast, but also the way we create the pork is more from the Andeans. So we we’re trying to make a mix of everything, so our menu is really fresh. For example, Ceviche, I have to make that day so it goes quickly,” said Killion.
Costumers of all ages enjoy the unique flavors on the menu at Patas Azules.
“I’m super happy. People enjoy it and they really enjoy the food,” said Killion. “The kids eat the whole thing and their parents are happy because kids are starting to eat.”
Patas Azules’ primary location is in Somerset; however, the food truck is set to visit Rapid City in the future, so stay tuned for Ecuadorian cuisine coming your way soon!
