Birch Restaurant in Sheridan, Wyoming
Travis & Heather Sorenson, owners of Birch Restaurant in Sheridan, Wyoming, are providing local residents with an upscale dining experience.
After visiting the area, Travis and Heather fell in love with the town and with the area. However, they realized it was missing a little bit of a food scene and so they decided to bring some California dynamic to Sheridan. The focus is on fresh food including fresh, flown-in fish from Hawaii.
One thing that is important to the Sorenson is to cross utilize product when they can.
“If he’s using cucumber, we put cucumber in a drink and we try to use the freshest ingredients. And just bring a little bit of culture to Sheridan a little bit.”
They also craft their own cocktails.
“All of our syrups we make in-house, we infuse some of our own liqueurs, all of our tinctures are made in-house. So any kind of bitters we make our own. We have black pepper, mint, cilantro, sage, lavender, peach, you name it, we’ll make it. We make them all. And it just gives the the cocktail like a less artificial taste. You can taste the alcohol instead of all this sugar.”
Travis describes the atmosphere to be very relaxed and laidback.
“It’s very approachable; coming in cowboy boots, coming in a tank top, or bring kids in, to others it seems a little bit hoity toity, but I think that’s just a cultural thing for me. I’ve cooked all over the California regions and food’s quite a bit fancier there. You’ve got formal environments and this is not that. But I mean, it is an eclectic style place and I think it’s a pretty approachable, fun, comfortable environment.”
Heather explains, “When you come in here you feel like you are visiting somewhere. You don’t feel like you’re in Sheridan, Wyoming, anymore until the Burlington Northern train goes by and then you’re right back at home.”
A Great Restaurant in Sheridan, WY
The Birch Restaurant is located just a couple of blocks off of Main Street, which is walking distance from downtown Main Street.
The Sorenson’s have another restaurant opening as well. They are in the process of creating Spruce, which is going to be on Main Street. Heather describes the new restaurant:
“But when you walk into that building, you will definitely feel like you’re taken back to the historic, different era.”
The Sorenson’s love what they are doing and are happy that community has been so supportive.
“It’s been fun. Wouldn’t want a restaurant anywhere else.
