SHERIDAN, W.Y. – Every Thursday in Sheridan, WY, you can find Hetty’s Wood Fire Pizza truck outside of Blacktooth Brewery.
Travis Hetland, owner, describes how the pizza truck got started.
“I got tired of eating bad pizza, when we were in Casper back, oh, years ago, when we had a real job. We started making good pizza because we had had it before…we had eaten it. But this is a different kind of pizza because I make it from scratch and it’s Italian Neapolitan/New York style hot, but it’s made authentically. I love pizza, just like all of us.”
Hetty’s Pizza describes what it means to make authentic pizza. They have a wood fire/Neapolitan style brick oven. They also stretch the dough by hand and throw it up in the air. After topping the pizza, the oven cooks 700 degrees on the floor and 800 or 900 degrees on the top. The pizza cooks very quickly.
Hetland describes their best selling pizza. “It’s the Smoky Yardbird. It’s a white sauce. So, we make our own alfredo, and then it’s chicken and bacon and sun dried tomatoes and green onions and basil and, yeah, it’s. It’s delicious.”
Hetty’s pizzas are 14 inches and will serve 2 to 3 people. However, if you are really hungry, you may want one all to yourself.
Hetland encouragingly says, “You got to do what you love, I guess. And I think that this is a good example of doing what you love. I used to work a real job. And this is…this is…where it’s at. This is amazing. It’s cool to be your own boss and do your own thing.”
